In a couple days, I peek for moisture--just like I do for scales. In about 2 weeks, I start checking almost daily for sprouting. Once sprouted, I remove the top cardboard and let room daylight in at which time the will start start to bobby pin and begin to show green. Using this method I get good germination over a short, uniform time frame. In other words, generally speaking, all those that are going to sprout are going to sprout within a 5 or 6 day period as a group which happens to work out great. Because here's what I do next: On the very next day, I place the cardboard and baggie on a countertop, I slice open the sides of the baggie and open the top side up completely. Then with a large spatula slide gently under the mix, I gently slide the contents into a pot. It doesn't matter if these sprouts and mix gets upset a little--sprouts are very hardy at this point. Once in the pot, I sprinkle about 1/8 inch or 3mm of mix over the top, give it a heavy misting and in a couple days they're all up and growing like gangbusters.
