What I would do is take a sweater from your fiance which really fits him well. Measure it really well and draw yourself a picture with all the measurements in place like width, height to armholes, sleeves, shoulder width.
Then make a swatch with the technique/stitch you will use and measure it carefully. Then translate the measurements of the swatch to the numbers in the diagram/picture.
Calculating it is easy, I think you call that proportions?
say the swatch you might have done with 20 stitches measures 4 inches.
the sweater might measure 24 inches from side to side
so, 4 inches = 20 stitches
24 inches =X
24 x 20 =480
480 : 4 = 120
Starting up the front or the back you need to cast on 120 stitches, if you decide to do the whole sweater in the round, you cast on 240 stitches
Then simply follow the recorded measurements.
Any stitch you pick would work with this.
