Tom's way with fish sounds good. I might do flounder that way soon. My usual white fish filet recipe is with cod, I have done it with walleye too. Thin some mayo with lemon or lime juice, season it, coat the filet. Mix parmesan and dry crumbs about 1/2 and 1/2, coat well. Drizzle some butter. Bake. Tilapia being thinner, I guess watch the time. We love it. The only time I remember noticing fishiness is with catfish nuggets. Maybe being closer to the coast helps. Or I'm oblivious- that could be. Smiling
