I've made a butternut squash soup that I really like. Put peeled, seeded, cut up squash in a pot with enough chicken broth to cover it, cook until soft, then blend (stick blender works great for this). Add fresh grated nutmeg (not a bunch so that the flavor is "wow, nutmeg," just a hint) and a few shakes of Tabasco. Add milk or cream to adjust the consistency.
