Dehydrated lemon slices are great for tossing into a glass of water (or tea, etc.). A friend freeze-dries them for this purpose, and hers are prettier than what you get with a regular dehydrator.
I bought an Excaliber years ago when somebody finagled a group discount on DG for them. I've had round tower ones in the past, but I love the big square trays on the Excaliber -- no working around that donut hole. It does seem like a waste to run it with just a few trays, but I do it anyway.
I haven't used it for jerky in years, but I like that it has the higher heat settings to do meat safely. I've probably used it for apples more than anything else.
I recently made a bunch of sweet potato treats for Josie (golden with kidney issues, so no more protein treats for her). I got several bags of fairly skinny potatoes, baked until soft, then sliced them in half lengthwise. I left the skin on and smashed them to about 1/4" thickness, so they'd dry evenly and more quickly. Sprinkled with Ceylon cinnamon and put them in on a medium heat level. The goal was to dry them to the chewy stage, but some got crunchy. I'm eating them, too...
I didn't see if anybody made zucchini bread with their dried zucchini. I think that would be a great use for it. Instead of squeezing out excess water from fresh or frozen shredded zucchini... grab a handful of dried, instead!
