Good video here about mezcal (a close cousin of tequila) ... how it is made, how the industry is growing (a 4 fold increase in 6 years), how it is regulated.

The one featured is made from Agave karwinskii, a native of the Valley of Tehuacán in southern Mexico (5000-6000 ft. elevation), grown from seed. Kind of a weird plant for an agave because it can grow a tall stem.
