I eat gnd chuck 80/20, cooked low temps it reabsorbs its liquad. My recipe for stuffed bell pepper is: brown 2# ground meat with as much onion diced as you like (1/2 onion or 1 medium onion) add 16oz tomato sauce (or canned tomatoes or Rotel) add 1 TBSP Worcestershire, 3 to 4 cups water, and salt. Then add 2 cups uncooked rice, (this recipe calls for frozen chopped bell peppers, but I estimate that would have been 1/3 to 1/2 package, so as much as you like, chuckl), cover and let cook on low til rice is done. When rice is soft and moisture is right, add several slices (or chunks) of cheese and allow to melt. Can be used to stuff peppers or eaten as is.
Hope that helps, I like it before stuffing them, but thats because I like my bell peppers raw.
