For the beans, you might want to try several different varieties and see if it makes a difference as far as freezing them. I grow a lot of beans and freeze enough to last us all winter and until the next summer's harvest - they aren't quite as good as fresh of course, but close to it. (After I blanch the beans I use my salad spinner to remove the excess water, then pack them into freezer bags - they don't get nearly as much frost/ice on them that way.)
