Ed, when you have too many Poblanos in a few months, here's an article (with recipes) for suggestions on using them :). The site exists via advertising, I think, and visually it's distracting. Usually has really good info and worth scrolling (a lot) past the ads and gathering the info. I think some of ideas could apply to other peppers as well as Poblanos. It would only change the pepper flavor profile. I've eaten some of these, but not made any of them myself.
