Carrot Cake

Pre-heat oven to 350 degrees.

Sift together the following dry ingredients in a bowl.
2 1/2 Cups Flour
1 1/4 Teasp. Cinnamon
1/2 Teasp. Nutmeg (I use freshly ground)
1/8 Teasp. Ground Cloves
1 1/4 Teasp. Baking Powder
1 Teasp. Baking Soda
1/2 Teasp. Salt

Shred 3 Cups of Carrots

I do this part in a food processor
4 eggs
1 1/2 cups Granulated Sugar
1/2 Cup Dark Brown Sugar
1 1/2 Cups Oil
Blend until well beaten, then transfer to a separate larger bowl.
(if you don't want to use a food processor, just beat it with a mixer)

Add the flower mixture to the egg mixture about a 1/3 at a time beating after each addition, beat until smooth.

Then stir in:
3 cups of shredded carrots
1 cup of raisins (I like to use golden raisins)
1 cup of coarsely chopped Walnuts

You can use 2 layer cake pans or 1 - 9 x 13 pan, greased and floured.

Bake at 350 degrees for approximately 35 to 40 minutes, or until a toothpick comes out clean.
Frost with Cream cheese frosting when cool.

p/s: if you don't like raisins or nuts, leave them out. Smiling
