Gardenias can take the Arizona heat but are not considered winter hardy in regions that get regular winter freezes. If your garden gets frosty in the winter, gardenias should not be planted outdoors. However, you can plant them in containers and take them indoors in the fall and then back outdoors again in the spring when all threat of frost has passed.
