FAQ #3:
Why is
it that some plants, such as carrots and beets, form large taproots
and others, like tomatoes, don't?
Answer:
Carrots
and beets are biennials. They store sugars and starches in their
large taproots and use this energy to grow, flower, and produce
seed during their second season. We don't usually see carrot or
beet flowers because we harvest the plants at the end of their first
season.
