Cilantro Prevents Food Poisoning

If you want to avoid food poisoning this summer, eat cilantro-rich foods, such as salsa. Researchers at the University of California, Berkeley, and the Autonomous University of Guadalajara, Mexico, have found that one compound found in cilantro dodecanol is very potent at killing salmonella bacteria. Salmonella is one of the main microbes responsible for thousands of food poisoning illnesses each year.
In laboratory tests dodecanol was twice as effective as the commonly used medicinal antibiotic, gentamicin, at killing Salmonella bacteria.
Although eating cilantro can help protect against Salmonella bacteria, don't rely on it to prevent illness. You'd have to eat the equivalent weight of one hamburger to have a total protective effect. However, the findings could lead to future development of a dodecanol-based food additive to prevent foodborne illness.
