Do I need to prune an artichoke plant? How? What is the proper way to cut the fruit off?

Artichokes plants can be cut back to soil level at the end of the summer, or when the leaves begin to yellow. This will force new growth from the plant in the spring. Artichokes grow on stems and can be harvested just as the chokes (or flower buds) begin to open. Watch carefully; the green petals will begin to spread and you can harvest by cutting the stem one or two inches below the choke. Enjoy!
