Persimmon Nut Bread
Persimmons are great fresh, but if you have some extras on hand, this super bread recipe is a guaranteed winner at the next morning coffee with friends.



Ingredients

6 tablespoons butter

1 cup sugar

2 eggs

1 teaspoon baking soda

1 cup persimmon pulp

2 cups flour

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon cloves

2 teaspoons grated orange rind

1 cup chopped dates

1 cup chopped black walnuts



Preparation

Cream the butter and sugar. Add the eggs one at a time, beating well after each. Dissolve the baking soda in the persimmon pulp and add to the creamed ingredients. Combine the dry ingredients and stir into the creamed mixture. Add the orange rind, dates, and nuts and mix well. Bake in a buttered loaf pan at 350F for about 75 minutes or until a toothpick comes out clean. Cool and slice.
