World Champion Tiller Race
The fastest tillers in the world (modified and unmodified) compete at the Purple Hull Pea Festival in Emerson, Arkansas, scheduled for June 28 and 29. Garlicky Oven Fries
Ingredients
3 tablespoons vegetable oil
one half teaspoon salt
one quarter teaspoon paprika
2 cloves garlic, finely minced
5 medium unpeeled potatoes, cut into sticks
1 tablespoon grated Parmesan cheese
Preparation
Preheat oven to 450 degrees. Coat a large baking pan with cooking spray, or line it with with a sheet of aluminum foil coated with cooking spray. In a small bowl, mix together oil, salt, paprika, and garlic. Scrub and cut potatoes, and pile them into the prepared pan. Drizzle oil mixture over potatoes and toss to coat. Spread out potatoes in a single layer. Bake for 20 minutes, turning potatoes with a spatula every 5 minutes or so that they become brown and crisp on all sides. Remove from oven and toss with cheese.
Serves 4.
