Garlic Sweet Potatoes
Sweet potatoes may just be my favorite vegetable, and I like them lots of different ways. For a change of pace from sweetened recipes, try making them savory with garlic and ginger.



Ingredients

1 large sweet potato

1 tablespoon olive or canola oil

2 cloves garlic, chopped

1 teaspoon fresh chopped ginger

vegetable or chicken boullion

1 teaspoon cornstarch

1/2 cup chopped parsley



Preparation

Peel the sweet potato and cut it into half-inch cubes. Place the cubes in a non-stick skillet with 1 tablespoon olive or canola oil, and cook over medium heat for about 10 minutes or until tender, stirring often. Add 2 cloves chopped garlic and 1 teaspoon chopped fresh ginger. Cook another 2 minutes or so. Mix 1/2 cup vegetable or chicken boullion with 1 teaspoon cornstarch and pour it into the pan. Add 1/2 cup chopped parsley, and you have a side dish that has it all - flavor, beauty, and loads of good nutrition.
