The Great Book of Pears by Barbara Flores (Ten Speed Press, 2000, $17) is a resource for cooks and gardeners, offering detailed descriptions of the qualities of some 50 European and Asian pears. Also included are sections on history, cultivation, storage, sources, and uses of pears in the kitchen. There are excellent color photos in this 176-page book.
