Natural Landscapers Conference
The Louisville. Kentucky Chapter of Wild Ones Natural Landscapers is holding a conference on August 11th and 12th at Skylight Acres Farm in Shelbyville, Kentucky. Dr. Thomas Barnes, author of Gardening for the Birds will give an overview of Kentucky ecosystems. There will other programs on native warm season grass production.

Eggplant and Basil Spread
Enjoy the best of the summer vegetable and herb gardens with this easy-to-make spread that either be a chilled dip or sandwich spread. The recipe is adapted from my book Culinary Herbs from the National Home Gardening Club in Minnetonka, Minnesota.
1 eggplant (about 1 pound)
1/2 cup finely chopped sweet onion
1/2 cup peeled, seeded, and finely chopped fresh tomatoes
1/2 cup finely chopped roasted red peppers
1/4 cup finely chopped fresh basil
1/4 cup finely chopped fresh parsley
1 garlic clove, minced
2 tablespoons white wine vinegar
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
Place the whole eggplant in a large saucepan with water to cover. Bring to a boil over high heat, reduce heat to low, simmer until the eggplant is cooked so it's easily pierced with a fork. Drain, cool, peel, and mash the eggplant. In a bowl, combine the eggplant with the onion, tomato, red pepper, basil, parsley, garlic, vinegar, olive oil, salt, and pepper. Stir until well blended. Store in an airtight container overnight to allow flavors to blend.
Makes 2 cups
