Rose Hip Rhubarb Jam

1 cup rose hips

1 cup water

4 cup diced rhubarb

1/2 teaspoon salt

2 cups sugar

1 tablespoon grated lemon rind


Remove tassels (blossom end) of rosehips, cut in half and remove the seeds. Add water, rhubarb and salt and bring to boil in large kettle. Boil hard over high heat for one minute. Add sugar and lemon rind, stirring to dissolve. Continue to stir gently but continuously until jam tears off spoon. Remove from heat, let stand 3-5 minutes and stir gently again to dissolve foam. Pour into hot jars, leaving 1/2 inch headroom, seal and process in boiling water bath for fifteen minutes.

Eastern Wahoo (Euonymus atropurpureus)
Eastern wahoo (Euonymus atropurpureus) is in full fall fruit right now, with bright pink four-lobed capsules that split open while hanging on the shrub to reveal seeds covered with shiny scarlet fleshy coats. This is perhaps one of the best reasons to plant these shrubs, although they are fairly carefree plants for the naturalistic planting. They grow in sun or shade and in any soil as long as it is well-drained. Their tidy opposite rich green leaves are borne on green stems on a fairly narrow, upright shrub. The flowers are insignificant, but give rise to the magnificent fruits.
