Dutch Baby
Here's a great recipe to use up extra blueberries, raspberries, or even vegetables from the garden. To serve with vegetables, omit the sugar and increase to 1/2 teaspoon the salt. Top with sauteed onions, red peppers, eggplant, zucchini, spinach, tomatoes, or any combination.



Ingredients

1 cup all-purpose flour

1 tablespoon sugar

1 1/2 cups skim milk

2 large eggs

1/2 teaspoon salt

confectioner's sugar

sliced fruit or berries



Preparation

Preheat oven to 375oF. Melt butter in 9 or 10 inch cake or tart pan. In large bowl combine flour, sugar, milk, eggs and salt. Stir until combined. Pour batter into pan and bake for 45 minutes until edges have risen and are golden brown and center is set. Remove from oven and dust with confectioner's sugar. Serve with fresh fruit.
