Winter Celebrations
From now until the end of the year, the Chicago Botanical Garden will be transformed into a magical, winter wonderland. Evening events celebrate the winter holidays with horse-drawn carriage rides through the lighted garden, ice sculptures, story telling, demonstrations, family crafts, teas, and dinners. Butternut Squash Gratin
It's time to break out the winter classic vegetables. For me that includes butternut squash. For something different, try this recipe, which features not only the squash, but bread and cheese as well.



Ingredients

3 cups torn day-old bread

1/2 cup chopped onion

1 large clove garlic, minced

2 tablespoons olive oil

2 cups cooked butternut squash

1 large egg, lightly beaten

1 cup ricotta cheese

1/4 cup Parmesan cheese

3 tablespoons chopped parsley

3/4 teaspoon salt

1/4 teaspoon pepper



Preparation

Cover the bread with hot water and let stand until softened, 3 to 5 minutes. Drain and set aside. Saute the onion and garlic in oil. Mix the rest of the ingredients. Spread in an oiled 2-quart casserole. Bake at 325F, uncovered, for 35 minutes, until slightly puffed and beginning to brown.



Serves 4 to 6
