Blossoms of Light
Enjoy this season's Blossoms of Light event at the Denver Botanic Gardens. You can partake of holiday desserts, musical entertainment, children's crafts, and other activities. Then stroll through a spectacular display of indoor and outdoor holiday lights. It all happens on November 29-30, 6:30-8:30 p.m. The cost is $7 per person; kids aged 5 and younger are free. Reservations will be accepted by mail. For more information, call (303) 370-6674.

Cheddar Zucchini Casserole
If you still have some zucchinis (or other late summer squash) hanging around, don't let them go to waste. Here's a recipe for a hearty casserole to warm the autumn chill. A special thanks goes to Janell Amundson of Byers, Colorado, for this recipe.



Ingredients

1 cup cracker crumbs or stuffing mix

5 zucchini, sliced

3 tomatoes, sliced

1 onion, sliced

1/2 teaspoon salt

1 clove garlic, minced

1/2 teaspoon oregano

1/8 teaspoon pepper

1/2 pound cheddar, thinly sliced

4 strips bacon, cut in half



Preparation

Sprinkle the crumbs on the bottom of a 9-by-13-inch pan. Layer some of the zucchini, tomatoes, and onion in the pan. Sprinkle with some salt, garlic, oregano, and pepper. Continue layering until the vegetables are used up. Top with cheese slices and lay bacon strips on top of that. Bake, uncovered, at 350F for 45 minutes.



Serves 8 to 12.
