Lemon Blueberry Bread
Lemons seem to be pouring off the trees this year, with people dragging sacks full of the fragrant fruit to give away to neighbors and coworkers. Use some of those fresh lemons in this quick bread recipe.

3/4 cup sugar
1/2 stick butter, softened
2 eggs
Grated lemon rind from 1-2 lemons (according to taste)
2 cups flour
2-1/2 teaspoons baking powder
1 teaspoon salt
3/4 cup skim or 1% milk (regular if you don't mind the extra fat)
1/2-3/4 cup fresh blueberries (or thawed frozen berries)
2 tablespoons fresh lemon juice
2 tablespoons sugar

Cream sugar and butter. Beat in eggs and lemon peel. Sift dried ingredients, except for 2 tablespoons flour. Add to mixture, alternating with milk. Beat well after each addition. Toss blueberries with 2 tablespoons flour and fold into mixture. Bake at 350 degrees in a greased 9 x 5 loaf pan for 1 hour, or in 3 mini-loaf pans. Let rest in pan for 10 minutes, then remove. Combine lemon juice and sugar. Prick loaf with fork and drizzle juice mixture as a glaze. [Adapted from Make Ahead Meals, by Jean Pare (Company's Coming Publishing, Ltd., 2000; $14.99)]
