Clever Gardening Technique

Preserving Basil
To dry basil from the garden, pick only the freshest leaves, rinse them and blot them dry with paper towels. Air dry the intact leaves until they turn brittle, then store in airtight jars. Crumbling the leaves before storing can turn them bitter.

To freeze, fill ice cube trays with fresh leaves, then add water and place in the freezer. When frozen, pop the cubes out of the trays and store in a plastic bag.
