Nasturtium Shrimp Salad
Ingredients
2 teaspoons lemon juice
1/4 cup olive oil
salt and pepper
1 cup cooked, shelled shrimp, coarsely chopped
2 tablespoons finely chopped green onion
1 small tomato, cubed
1/2 avocado, peeled and cubed
lettuce leaves
2 tablespoons chopped nasturtium leaves
nasturtium flowers

Preparation
Whisk lemon juice and oil together, season with salt and pepper to taste. Add the shrimp and onion and toss lightly. Let stand 15 minutes to let flavors blend.

Add tomato, avocado, and chopped nasturtium leaves. Mound on lettuce leaves, surround with fresh whole nasturtium flowers.

Serves 2.

English Lavender
English lavender (Lavandula angustifolia) isn't really from England at all, but southern Europe. It's important to sniff-test lavenders before buying them for your own garden. Most people agree that English lavender is less likely to cause headaches than its cousin, French lavender. Grow lavender in a well-drained, sunny spot. She doesn't care for a lot of fuss, and prefers pebbles to organic mulches.
