An elegant finale to a romantic dinner.
1 16-ounce can dark, sweet, pitted cherries
1/4 cup apple juice
1 tablespoon cornstarch
2 tablespoons brandy or rum
3 cups vanilla ice cream (or ice milk, to save a calorie)
Drain syrup from the cherries and mix with the apple juice. In a small bowl, mix the cornstarch and 2 tablespoons of juice until no lumps remain.
In a small saucepan over high heat, bring remaining liquid to a boil and reduce heat to medium. Add cornstarch mixture, stirring constantly. Let mixture return to a boil and cook about one minute, or until thickened. Add brandy, stir in cherries and ignite.
Pour over individual portions of ice cream. Serve immediately.
