Broccoli with Thyme Vinaigrette

This recipe turns a simple side dish into a delicious salad.


1large head of broccoli, trimmed into bite-sized pieces
1/2 lime
Salt and pepper to taste

Thyme Vinaigrette:

1/4 cup red wine vinegar
2 tablespoons dijon mustard
1 tablespoon honey
1 tablespoon fresh thyme, finely chopped
3/4 cup olive oil
Salt and pepper to taste


Steam broccoli for 3 to 4 minutes, to desired tenderness. Transfer cooked broccoli to serving bowl. Squeeze fresh lime juice over the top and toss with salt and pepper. In a small bowl, combine the vinegar, mustard, honey, and thyme. Whisk in the olive oil and season with salt and pepper to taste. Transfer the dressing to a small serving bowl and serve on the side for drizzling over the warm broccoli.
