
| 1 | large head of broccoli, trimmed into bite-sized pieces |
| 1/2 | lime |
| Salt and pepper to taste |
Thyme Vinaigrette:
| 1/4 | cup red wine vinegar |
| 2 | tablespoons dijon mustard |
| 1 | tablespoon honey |
| 1 | tablespoon fresh thyme, finely chopped |
| 3/4 | cup olive oil |
| Salt and pepper to taste |
Steam broccoli for 3 to 4 minutes, to desired tenderness. Transfer cooked broccoli to serving bowl. Squeeze fresh lime juice over the top and toss with salt and pepper. In a small bowl, combine the vinegar, mustard, honey, and thyme. Whisk in the olive oil and season with salt and pepper to taste. Transfer the dressing to a small serving bowl and serve on the side for drizzling over the warm broccoli.
