Growing from Cuttings

I recently purchased some fresh herbs(basil, dill, fenugreek, cilantro, parsley) and would like to know if either or all of them will root if I place them in a vase of water (you know, like you can do with some houseplants)? Alternatively, will they root if I plant them directly in soil? I already know seeds are available, but these are the strains I'm used to using. Any helpful advice is appreciated. Thank you.
