Low income gardening

Hello!
My name is Lauren and my volunteer organization is trying to get some sort of gardening or food source information to the residents at a few low income housing developments. First off there is not much space (think of dorm size apartments). Second we are looking for things that are easy and yet nutritional to grow. I figured this website looked like it had some experts!
