Bell Peppers

I purchased some red, yellow and green bell pepper plants. However, all of the peppers look like banana peppers. They are thick like a bell paper and they are greenish yellow. Can someone tell me how long it takes for them to change colors. I am thinking maybe they change after they are picked, am I right?
