winter gardening

I have always wanted to have a winter garden (without a greenhouse) and just can't find the information I'm looking for, such as what to plant, and when this should take place. I live in Amarillo and don't know what will grow or how to take care of it. What do I need to do to get started? I'm ready now. I have summer gardens that do great so this shouldn't be that hard, right?
