Peach Tree

I have a wonderfully health dwarf peach tree. It gives large healthy peaches. The only problem is that the peaches are not sweet. Can anyone advise if they have heard of this problem? Am I missing some sort of mineral or fertilizer in my soil that is possibly causing this?
