Hello Lara,
The easiest and cheapest way to do this is to lay a single strip of lawn turf at the edge of the plant borders (to give the lawn an instant edge) and sow grass seed in the centre. This way you don't have to dig out your plants.
If your budget allows, you could always turf(instant lawn in rolls) all of the soil area. It would establish quicker and you should be able to walk on it in about three weeks.
